Nişastanın təyini onun yodla qarşılıqlı təsirdə olub, göy rəng əmələ gətirməsinə əsaslanır.
Sellüloza nişastaya nisbətən daha çox yayılmış karbohidratdır.O, bütün bitki hüceyrələrinin qılaflarını təşkil edir.
